Istovremeno, prehrambena industrija stvara znatne koli\u010dine nusproizvoda (uljne poga\u010de, tropovi, ljuske, kore i dr.) koji su \u010desto zanemareni, iako predstavljaju vrijedan izvor bioaktivnih spojeva, osobito fenolnih komponenti. Cilj ovog projekta je razviti funkcionalne pekarske i mlije\u010dne proizvode oboga\u0107ene prirodnim biljnim dodacima i prehrambenim nusproizvodima. Tako\u0111er, projekt \u0107e razviti i validirati protokole za in-vitro odre\u0111ivanje biodostupnosti bioaktivnih spojeva, \u010dime se doprinosi razvoju metodologije u podru\u010dju funkcionalne hrane. Kroz procjenu u\u010dinaka razvijenih proizvoda na odabrane zdravstvene biomarkere dodatno \u0107e se potvrditi njihova funkcionalna vrijednost. Kroz interdisciplinarni pristup, projekt kombinira znanja iz podru\u010dja prehrambene tehnologije, biotehnologije i nutricionizma. Rezultat \u0107e biti razvijeni inovativni funkcionalni proizvodi (kruh i mlije\u010dni proizvod) s pobolj\u0161anim nutritivnim i senzorskim karakteristikama, \u0161to je konkretni doprinos kru\u017enom gospodarstvu kroz iskori\u0161tavanje prehrambenih ostataka. Projekt tako\u0111er aktivno uklju\u010duje mlade istra\u017eiva\u010de i studente, koji \u0107e sudjelovati u istra\u017eiva\u010dkim aktivnostima, \u010dime se dodatno ja\u010da kapacitet za budu\u0107i znanstveni i stru\u010dni rad. Dugoro\u010dno, rezultati projekta mogu doprinijeti razvoju odr\u017eivih prehrambenih rje\u0161enja s pozitivnim zdravstvenim u\u010dinkom i komercijalnim potencijalom.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-acf6c48 elementor-widget-divider--view-line elementor-widget elementor-widget-divider\" data-id=\"acf6c48\" data-element_type=\"widget\" data-widget_type=\"divider.default\">\n\t\t\t\t\t\t\t<div class=\"elementor-divider\">\n\t\t\t<span class=\"elementor-divider-separator\">\n\t\t\t\t\t\t<\/span>\n\t\t<\/div>\n\t\t\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-9b95af elementor-widget elementor-widget-text-editor\" data-id=\"9b95af\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>With the growing awareness among consumers regarding the importance of a balanced diet and functional foods, the demand for food that goes beyond basic nutritional value and possesses additional health benefits is also on the rise. At the same time, the food industry generates a significant number of by-products, such as oilseed press-cakes, pomaces, shells, and peels, which are mostly neglected, even though they represent a rich source of bioactive compounds, especially phenolic components. The aim of this project is to develop functional bakery and dairy products fortified with natural plant-based additives and food by-products. The development and validation of protocols for in vitro bioavailability testing will be conducted, which represents a contribution to the development of methodology in the field of functional food. Furthermore, the assessment of the developed products on selected health biomarkers will further contribute to confirming the functional value of these innovative products. Through an interdisciplinary approach, the project integrates knowledge from the food industry, biotechnology, and the nutrition field, it provides an interdisciplinary approach.<br \/>The expected outcomes include the creation of innovative functional products (bread and dairy products) with enhanced nutritive and sensory characteristics, following the circular economy principles through food by-products valorization. The project also actively involves young researchers and students who will participate in the research activities, thereby further strengthening the capacity of future scientific and professional work.
