Tako \u0107e projektne aktivnosti uklju\u010diti primjenu nusproizvoda prerade \u010daja (biljna\/\u010dajna pra\u0161ina), nusproizvoda prerade aronije (trop aronije) te nusproizvoda proizvodnje piva (hladni lom) u razli\u010dite svrhe. \u010cajna pra\u0161ina i trop aronije koristit \u0107e se za pripremu visokovrijednih ekstrakata, pripremu bioaktivnih inkapsulata, stabilizaciju biljnih ulja, pripremu krem-proizvoda, ekstrudata, aromatiziranih jakih alkoholnih pi\u0107a, mesnih proizvoda te piva i pivu srodnih proizvoda. Hladni lom bi se dodavao u nativnom obliku u mesne proizvode te tijekom proizvodnje sladovine, a drugi na\u010din primjene ovog nusproizvoda uklju\u010divao bi ekstrakciju aktivnih komponenta u obliku razli\u010ditih ekstrakata koji bi se dodavali u mesne proizvode te u pivo i pivu sli\u010dne proizvode.<\/span><\/p>\n<p style=\"text-align: justify;\"><strong><span style=\"font-family: georgia, palatino, serif; font-size: 12pt;\"><span style=\"font-size: 14pt;\">Project description:<\/span><br \/>\n<\/span><\/strong><span style=\"font-family: georgia, palatino, serif; font-size: 12pt;\">Through this project, the potential of using various food industry by-products in the preparation and stabilization of high-value extracts will be examined, as well as the use of by-products in the development of new functional food products. Thus, the project activities will include the use of by-products from tea processing (plant\/tea dust), aronia processing (aronia pomace), and beer production (cold break) for different purposes. Tea dust and aronia pomace will be used for the preparation of high-value extracts, bioactive encapsulates, stabilization of vegetable oils, preparation of cream products, extrudates, flavoured strong alcoholic beverages, meat products, and beer and beer-related products. Cold break, in its native form, will be added to meat products and used during the production of wort.
