- The aim of this project is to study the bioaccessibility of polyphenolic compounds from fruits (amount of polyphenols accessible for the absorption in the digestive system). For this reason, the simulated digestive processes of fruits (apples and elderberries) and the amount of polyphenols in its original form after the digestive process at different time intervals, will be examined. The effect of fiber (b-glucans and/or cellulose) on bioaccessibility will be investigated too. The inhibition of a-amylase i a-glucosidase activity by fruit polyphenols will be studied due to their importance in the glucose metabolism. All results will be analyzed with kinetic models (pseudo-first and pseudo-second order).
