Sažetak: Moderan stil života i neuravnotežena prehrana doveli su do pojave raznih bolesti. Zbog toga raste svjesnost o hrani i dodacima prehrani koji mogu imati potencijal za pozitivan zdravstveni učinak. Istražuju se novi izvori prirodnih bioaktivnih spojeva i dodataka prehrani koji mogu poboljšati zdravlje.
Cilj:. Cilj projekta je iz hrane i nusprodukata prehrambene industrije tradicionalnim i inovativnim tehnikama ekstrahirati bioaktivne spojeve i komponente s potencijalom dodataka prehrani, karakterizirati ih, i ispitati njihovo ponašanje i specifične bioaktivnosti tijekom simulirane probave. Na temelju istraženih specifičnih bioaktivnosti i procjene unosa skupina namirnica relevantnih za promatrane komponente, cilj je pronaći novitete u prehrambenim smjernicama te definirati nove mogućnosti upotrebe izoliranih spojeva kao dodataka prehrani.

Summary: Modern lifestyle and unbalanced diet have led to the emergence of various diseases. Therefore, awareness of foods and food supplements that may have the potential for positive health effects is growing. New sources of natural bioactive compounds and food supplements that can improve health are being investigated.
Aim: The aim of the project is to extract bioactive compounds and components from food and by-products of the food industry using traditional and innovative techniques, characterize them, and test their behavior and specific bioactivities during simulated digestion. Based on the investigated specific bioactivities and the assessment of the intake of food groups relevant to the observed components, the aim is to find novelties in dietary guidelines and define new possibilities for the use of isolated compounds as food supplements.
